CHICKEN MARSALA From: Cher Lindenmuth Date: Tue, 12 Jul 1994 18:18:05 -0400 (EDT) 4 boneless Chicken Breasts 3 Tbs Butter 3/4 tsp Salt 1/2 Cup Dry Marsala Wine 1/4 tsp Pepper 1/2 Cup Water 2 Tbs Flour Sprinkle chicken with salt and pepper; roll in flour. Over medium-high heat, melt butter. Cook chicken until golden on both sides. Remove chicken. Reduce heat to low. Stir wine and water into drippings, scraping to loosen any brown bits. Return chicken to skillet. Cover, simmer about 30 minutes. I usually make a little more sauce and personally like to increase the wine over water mixture a bit. *************************** CHICKEN PARMESAN WITH MUSHROOM MARSALA SAUCE From: Stephanie Austad Date: Wed, 13 Jul 1994 00:18:08 -0400 (EDT) 2-3 Tbs olive oil 6-8 pats butter 1 cup seasoned bread crumbs 1 cup grated parmesan cheese 1 Tbs Italian seasoning 6 chicken breasts 1 Cup flour 2 eggs, beaten in med. bowl Sauce: 1 lb.mushrooms, sliced 3-4 Tbs butter 1/3 cup Marsala wine Combine bread crumbs, seasoning and cheese on plate. Coat chicken with flour, dip in egg, then coat with bread crumb mixture. Set on wax paper and let stand in refrigerate 2-3 hours. Place pats of butter in middle of skillet and place olive oil around the butter and fry the chicken until golden brown. Sauce: Saute mushrooms in butter. Add wine.
